Moroccan Style Quail

Ingredients:

  • 2 whole quail marinated overnight in Rasel Hanout (tagine spice)
  • 1 tin (400g) chopped tomatoes
  • 1 small courgette chopped into cubes
  • 2 carrots diced
  • 1 onion finely chopped
  • 2 cloves garlic crushed
  • 40g each dried chopped apricots, currents and chopped dates
  • 25ml cooking oil

Preparation

  1. Pan Fry the quail in a little hot oil to seal and then place in a hot oven to roast for 15 minutes.
  2. Sauté the vegetables in a little cooking oil and add the tomatoes and dried fruit, cook through and allow to thicken a little.
  3. Cook the cous cous following the instructions on the packet and add the spices; stir in the dried fruit and heat through.
