Spanish Style Quail

Ingredients:

  • 1 whole quail, breasts and legs removed (bone in the legs)
  • 1 eating apple (braeburn or similar)
  • 3-4 small slices chorizo
  • 1 small chicory
  • 25g butter
  • 1 clove garlic crushed
  • 1 tbsp chopped sage

Preparation

  1. Peel, core and slice the apple into 8 pieces. 2. Chargrill the quail breasts and legs until golden, skin crisp on the outside, but the meat soft to the touch and pink in the middle leave to rest on a warm plate whilst preparing the rest of the dish.
  2. Pan fry the apple, chorizo, garlic, chicory and sage in the butter and season.
  3. Place all the cooked ingredients on a plate, slice the breasts in half and serve.
